Philippe has a menu of just six dishes, which change ever six weeks. The fact that Philippe’s passion is looking for good, fresh products to help the public discover his cooking is not unrelated.


Over time his research has brought him into contact with many Luxemburg artisans who supply him with meats and cheeses. Philippe prefers these small producers “because choosing that person’s product means you are rewarding the person’s work”.


Self taught with many years’ experience in the kitchens of international hotels, Philippe adores the multicultural atmosphere of the European area of Brussels, which allows him to demonstrate the region’s excellent products while staying in contact with a wide range of people.


Moreover, this multiculturality can also be seen in the wine list, in which we find wines from many different countries, European above all. “It is important that the wine list stays fresh”, the chef explains. “So it must be original and change often”.
